Pasta Carbonara

Ingredients:

12oz pasta
1 onion (minced)
2 cloves of garlic (minced)
3 eggs
3/4 cup parmesan
3/4 cup heavy cream
1/2 cup peas
1/2 cup pancetta or bacon OR both
Salt & Pepper to taste
Directions:
Fry pancetta/bacon
Remove once cooked through and drain on a paper towel
Boil a large pot of water (salt the water)
Return the pan to the stove and add onions, garlic, salt & pepper
Cook until golden and set aside
In a large mixing bowl combine eggs, parmesan, cream, salt & pepper
Once water boils, add pasta until Al Dente
Drain pasta and reserved 1 cup of pasta water
While pasta is still hot SLOWLY pour in egg mixture
STIRRING the entire time (do not scramble your eggs)
If sauce is too thick add in a splash of pasta water
Once sauce is fully added, add pees, pancetta, onion and garlic
Serve immediately & garnish with parmesan
