Pasta Carbonara

Ingredients:

  • 12oz pasta

  • 1 onion (minced)

  • 2 cloves of garlic (minced)

  • 3 eggs

  • 3/4 cup parmesan

  • 3/4 cup heavy cream



  • 1/2 cup peas

  • 1/2 cup pancetta or bacon OR both

  • Salt & Pepper to taste


Directions:

  1. Fry pancetta/bacon

  2. Remove once cooked through and drain on a paper towel

  3. Boil a large pot of water (salt the water)

  4. Return the pan to the stove and add onions, garlic, salt & pepper

  5. Cook until golden and set aside

  6. In a large mixing bowl combine eggs, parmesan, cream, salt & pepper

  7. Once water boils, add pasta until Al Dente

  8. Drain pasta and reserved 1 cup of pasta water

  9. While pasta is still hot SLOWLY pour in egg mixture

  10. STIRRING the entire time (do not scramble your eggs)

  11. If sauce is too thick add in a splash of pasta water

  12. Once sauce is fully added, add pees, pancetta, onion and garlic

  13. Serve immediately & garnish with parmesan
