Oatmeal Cookies

Ingredients:

  • 2 sticks of butter (softened) OR plant based vegan butter

  • 1 cup brown sugar

  • 1 cup sugar

  • 2 eggs OR for vegan recipe substitute with 1/4 cup coconut milk

  • 2 teaspoons vanilla

  • 1 1/2 cups flour

  • 1 tsp salt

  • 1 tsp baking soda

  •  3 cups old fashion oats

  • Chocolate Chips (I don't measure this... maybe 2 cups? Whatever floats your boat, or don't add them)


Directions:

  1. Oven to 350

  2. Mix/whip butter, sugar and brown sugar together

  3. Add eggs(or coconut milk) into butter mixture

  4. Add vanilla

  5. Combine flour, baking soda and oats in a separate bowl

  6. Slowly add dry ingredients into wet mixture continuously mixing

  7. Add chocolate chips (or any additions you would like, pecans, toffee, etc.)

  8. Prepare a baking sheet (Spray or use foil/parchment)

  9. Scoop into balls and bake for 11-12 min



*This recipe makes a ton of dough, to save the rest of the dough follow these steps:

  1. Take out wax paper and lay piece big enough to roll the extra dough

  2. Plop the dough on the wax paper, roll and fold into a cylinder shape (the shape you by cookie dough from the store.... you get the point)

  3. Roll the dough and twist the ends
