Marinated Mushrooms

Ingredients:

  • 1 tbs chopped parsley

  • 1/3 cup wine vinegar

  • 2/3 cup oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tbs lemon juice

  • 1 clove garlic

  • 2 lbs. small mushrooms (slice large mushrooms)


Directions:

  1. Combine all ingredients but mushrooms in a large bowl

  2. Bring large pot of water to full boil

  3. Add cleaned mushrooms and a splash of white vinegar

  4. Boil for about 2 minutes

  5. Drain and let mushrooms cool

  6. Add cooled mushrooms to marinade
