Creamy Vegetable Penne

Ingredients:

2 zucchini
1 cup cremini mushrooms
1 cup grape tomatoes
1/4 oz chives
1 lemon
1 lb penne (or whatever pasta you'd like)
1 TBS Italian seasoning
1/2 cup veg stock
1/2 cup creme fraiche/sour cream
1/2 cup parmesan
Directions:
Boil water for pasta (salt the water)
Wash, dry and chop all produce
Saute zucchini and season with salt & pepper
Set zucchini aside
Saute mushrooms
Set mushrooms aside with zucchini
When boiling the pasta, set 1 cup of pasta water aside for the sauce
Heat 2 TBS butter and oil
Add tomatoes, salt and pepper
Add half the chives and lemon
Add stock and 1/3 cup reserved pasta water
Whisk in creme fraiche/sour cream
Bring to simmer and add in zucchini, mushrooms and penne
Add 1 TBS butter
Garnish with chives, parmesan and lemon
*add more pasta water if necessary
