Creamy Vegetable Penne

Ingredients:

  • 2 zucchini

  • 1 cup cremini mushrooms

  • 1 cup grape tomatoes

  • 1/4 oz chives

  • 1 lemon

  • 1 lb penne (or whatever pasta you'd like)

  • 1 TBS Italian seasoning

  • 1/2 cup veg stock

  • 1/2 cup creme fraiche/sour cream

  • 1/2 cup parmesan


Directions:

  1. Boil water for pasta (salt the water)

  2. Wash, dry and chop all produce

  3. Saute zucchini and season with salt & pepper

  4. Set zucchini aside

  5. Saute mushrooms

  6. Set mushrooms aside with zucchini

  7. When boiling the pasta, set 1 cup of pasta water aside for the sauce

  8. Heat 2 TBS butter and oil

  9. Add tomatoes, salt and pepper

  10. Add half the chives and lemon

  11. Add stock and 1/3 cup reserved pasta water

  12. Whisk in creme fraiche/sour cream

  13. Bring to simmer and add in zucchini, mushrooms and penne

  14. Add 1 TBS butter

  15. Garnish with chives, parmesan and lemon


*add more pasta water if necessary
