Chicken Salad

Ingredients:

  • 2 chicken breasts

  • 1 cup mayo

  • 2 celery sticks

  • 1 TBS fresh parsley

  • 2 scallions

  • 2 tsp dijon mustard

  • 2 tsp fresh dill

  • 1/2 tsp lemon juice

  • 1/2 tsp lime juice

  • 1/4 tsp onion powder

  • Salt

  • Pepper

  • Paprika

  • Seasoned salt



Directions:

  1. Season chicken with salt, pepper, olive oil

  2. Bake chicken at 350 for 30-40 min

  3. Let chicken cool for 5-10 min

  4. Shred chicken with a fork or add to a mixer

  5. Chop dill, celery, scallions and parsley

  6. Add all ingredients to a bowl expect for the chicken

  7. Add mayo mixture to the chicken and combine

  8. Season to taste

  9. Refrigerate for at least 2 hours before serving
