Biscotti

Makes approx. 35-40 Biscotti


Ingredients:

  • 4 eggs

  • 1 cup oil

  • 1 cup sugar

  • 3 tsp baking powder

  • 3 tsp extract (almond, vanilla, anise)

  • 3 1/2 cups flour

  • 1 cup almonds

  • chocolate chips (as desired)

  • Cinnamon



Directions:

  1. Mix eggs, oil, sugar, baking powder and extracts

  2. Add flour by hand

  3. Fold in almonds and chocolate chips

  4. Use 3 small foil pans or 2 large biscotti pans (greased)

  5. Sprinkle with cinnamon and sugar

  6. Bake in 350 degree oven until browned (approx.. 30 min)

  7. Slice and toast biscotti for 10 mins (Set oven to broil)

  8. Flip biscotti over for 5 min WATCH CAREFULLY
